Our workshop strictly prohibits white sugar, preservatives, and artificial colorings. Too often used in pastry and bakery, white sugar flattens flavors, overwhelms the subtlety of raw ingredients, and brings a harsher, less nuanced sweetness. We prefer natural Thai sugars — coconut, cane, honey — valued for their aromatic depth, smooth mouthfeel, and more measured glycemic impact. Every creation is prepared on-site from fresh ingredients, in pursuit of balance, precision, and refinement.
